If anyone is interested, here’s some images of the ESP-07 going down through the layers. They’re aligned (roughly), so if you’ve got Gimp or Photoshop, you can add them as layers and adjust the opacity to look through the layout.

Yeah I’ve done it a few times. With a 2-layer boards like this, using photoshop to blend the layers it makes it fairly quick to recover a schematic.
Feel free to do anything with the images, consider them public domain.
